To make rice flour, soak 1 cup raw rice in water overnight. Next day, drain water and dry the rice on a cloth for 20-30 mts. Grind the rice to a fine powder. Sieve and use the fine rice flour. Grind the remaining coarse rice grains to make a fine powder.
Ingredients
Rice flour - 1 cup
Powdered sugar - 3/4 cup + 1 tbsp, powdered
Coconut - 2 tbsps, freshly grated (optional)
Cardamom powder - 1/2 tsp
Milk - few tsps
Ghee - 1 tbsp
Method
Take a bowl, add freshly ground fine rice flour. Add grated coconut, powdered sugar and cardamom powder and mix.
Add ghee and mix well. Add little milk, tsp at a time and make a soft dough.
Remove to a serving bowl. You can make smaller balls of the chalimidi dough or make a single large ball and offer as prasadam.
