Crumb fried baby corn

Ingredients

Baby corn - 100 gms
Lemon - 1
Pepper powder - 5 gms
Corn flour - 10 gms
Maida - 10 gms
Herbs - a pinch
Breadcrumbs - 50 gms
Oil - for frying

Method

1. Marinate the boiled baby corns in lemon juice, salt, pepper powder and herbs.

2. Make a batter with corn flour and maida.

3. Dip the baby corns in the batter, roll it on breadcrumbs and deep-fry.

4. Serve with tomato sauce.

green coconut chutney

Ingredients

Fresh coconut - 4 tbsp, grated
Roasted Bengal Gram ( Dalia/Pottukadalai) - 1 tbsp
Green chilli - 1 to 2
Cilantro - 3 tsps, finely chopped
Salt to taste

Method

Grind all the above to a smooth paste using little water. Add tadka * and mix well. Add more water to desired consistency.

TADKA* Ingredients & Method

1/2 tsp mustard seeds, 1/2 tsp split black gram , 2 curry leaves, a pinch of asafoetida , 1 tsp oil. Heat a small pan and add mustard seeds. When it starts to splutter add split black gram, curry leaves and a pinch of asafoetida. Wait for few seconds or until the black gram turns light brown and add this to chutney.

Fried Cauliflower

Ingredients:

Cauliflower 1 cut to medium florets
Chana dal Flour( besan) 3/4 cup
Rice flour 1/4 cup
Red chilly powder 1 tsp or according to your taste
Asafoetida 1/2tsp
Cilantro leaves finely chopped 1/2 cup
Oil for frying
Salt to taste

Method:

Mix all the ingredients and add 1/4 cup of water and mix them together to a thick batter. Heat oil in a pan. Wash the cauliflower florets in warm water and dip it in the batter and deep fry until golden orange color. Serve as a snack or with a meal.
